A cool, no-bake summer sweet from Crete

Easy Greek Fridge Dessert (Yogurt & Lemon)
Ingredients (serves 6)

1 kg full-fat strained Greek yogurt

1 can sweetened condensed milk (about 400 g / 14 oz)

Zest and juice of 3 lemons

Optional base: tea biscuits / butter cookies

Optional topping: extra lemon zest or seasonal fruit
Method

Mix the cream
In a large bowl, combine the yogurt and condensed milk. Mix until smooth and creamy. -
Add lemon
Add the lemon zest, then slowly stir in the lemon juice. The mixture becomes pleasantly tangy and slightly thicker. -
Optional biscuit base
If you like, line the bottom of a glass dish with broken biscuits for a soft, sweet base. -
Chill
Pour the mixture into the dish and smooth the top. Refrigerate for at least 3 hours (overnight is best) until set. -
Serve
Serve chilled. Top with lemon zest or fruit if you wish.
