Lagana (Greek flat bread)


2 cups lukewarm water

1 tbsp honey

8 gr dry yeast or 20 gr fresh yeast

2,5 cups bread flour

2 cups whole-wheat flour

2 tbsp tahini

1 tbsp olive oil

1 tsp salt

2-3 tbsp water

2 tbsp sugar

1/2 cup hulled sesame seeds

2-3 tbsp nigella seeds or 2-3 tbsp unhulled sesame seeds



Essential, favourite, traditional bread for the Clean Monday table! It suits equally with the sweet flavour of halva and the savory flavours of fish roe dip and olives!
