Zucchini balls


1,5 kg zucchini

1 large aubergine

1 medium potato

1 medium tomato

1 large or 2 medium onions

3/4-1 cup minced parsley

2-3 tbsp minced spearmint

170 ml olive oil (for the mixture and the frying)

2 tsp salt

1 tsp pepper

120 gr flour (for the wrapping)

8 gr dry yeast

1 tsp oregano

1-1,5 cup breadcrumbs

1 egg



They are delicious, full of different vegetables! This variety is the reason for their wonderful taste and the dry yeast makes them smooth and fluffy! Don’t forget that large zucchinis contain lots of fluids and need some time to drain them.
