Mini oven cheese pies with pastry sheet (without rolling pin)


For dough

350-400 gr flour

250 ml water

30 ml olive oil

15 ml vinegar

1/2 tsp salt

For working with pastry sheet

75-90 ml olive oil

A little amount of flour

For the filling

350 gr feta or xynomyzithra

For topping

1-2 tbsp sesame seeds (optionally)



Xynomyzithra is a soft, subacid cheese made from goat or sheep milk. It is not fresh but has undergone ripening for a few months. It can be replaced with greek feta or good quality cottage cheese (after we have drained it from its fluids) in various recipes.
