Chocolate-tangerine cake with olive oil


3-4 well-washed tangerines or clementines

440 gr sugar

3 eggs

180 ml olive oil

60 ml brandy or similar drink

100 gr grated chocolate or chocolate truffle

500 gr self-rising flour

1 tsp baking soda

1/2 cup powdered sugar

2-3 tbsp tangerine juice



So flavorful! Enjoy it with your morning and afternoon coffee, tea, juice or milk! If the tangerines are too sweet, reduce the quantity of the sugar. Do not open the oven before 45 mins (general tip for cakes). Bake it on the rack of the oven that is exactly under the middle one. If needed, cover it with baking paper a few minutes before it’s ready so that its surface won’t get burnt.
