Tomato pie with minced meat


For the pastry sheet

3 cups plain flour

1,5 tsp baking powder

1 tsp salt

4 tbsp olive oil

60 gr butter

1/2 cup sparkling water Zaro’s

For the filling

250-300 gr minced meat (keema)

3 tbsp olive oil

1 onion

1/4 cup wine

A pinch of salt

A pinch of pepper

1-2 garlic cloves (optionally)

200 gr grated tomato

2-3 tbsp parsley

200 gr feta

2 eggs

For the topping

2-3 tomatoes (about 400 gr)

A pinch of oregano

2-3 tbsp olive oil

A pinch of salt

2-3 tbsp breadcrumbs



This tomato pie is amazing both in appearance and in taste! If your tomatoes are juicy, remove the seeds and drain them. Add the sparkling water last in the dough, firstly 120 ml of it and if needed the rest 30 ml so that the dough is normal and no sticky. You can use any type of cheese or cheese mix you wish.
